A Princess enters her teens with a Mocha Mousse Meringue Cake





My little princess turns 13!

The 17th of February 2017 was the date my little Princess turned 13 and she is certainly not little any more. Being a school day, we woke her early and as usual we hid her presents under the bed.






This year she got a Puma Hoodie, two personalised Arsenal Mugs and two T-shirts. The mugs were ordered from Photobook and as there was a special for two mugs, I designed two different mugs. She was delighted with the mugs but remarked that it may have been better if I hadn't personalised it with her name as that would look more authentic - as if it really came from Emirates Stadium! Nonetheless, she was delighted with her two mugs as well as the Puma hoodie and t-shirts.

Although she is in afternoon school for Form One, she had to go in for the morning session today as there was a farewell for one of the teachers. So it was a bit of a rush to get both her and her brother off to school in the morning. Later at night, we bought some of her favourite Chinese Fried Rice from the shop in Bangsar (Vincent) and had dinner at my Mom-in-Laws before coming home to cut her cake.




I had made the cake on Thursday night and had spent a considerable amount of time trying to decide what to make her. She had said she would like a dessert cake and preferably something new that I hadn't made before. She likes anything chocolate. She also likes anything sour. I contemplated making a lemon cake but thought that would be too simple. Then I thought of a lemon meringue cake - something like a lemon meringue pie. However I wasn't sure whether all of us would enjoy it enough to finish a whole cake. Orange Chocolate mousse cake....orange cake with choc ganache....Sacher Torte.....Coffee Cake..... Mocha Mousse Cake......hmmm.

Chocolate Tart for a 12th Birthday!



My princess turns 12 today! How time has flown. Her birthday this year fell on a Wednesday. Although it was a school day, she woke up early, together with her brother, to watch the Chelsea-PSG European Champions League game on TV. They both woke up at 345am! At 530 we went down to wish her and then she came upstairs to look under her bed for her presents - as is the tradition. For her birthday this year, we got her a few things. First up was a set of 3 mini rubber balls (football, basketball and tennis ball) since she loves to toss them around; next we got her two 'magic' colouring books - just for kicks - the books magically turn into coloured pictures when you apply water to the pictures. Then we got her a really nice Puma tshirt, a Reebok tshirt, some fancy sports socks that she likes and finally the clincher was an Arsenal Backpack!





She was really pleased with the Arsenal backpack. Although I call her my princess, she is hardly a princess in behaviour and is a real sports buff!

While having breakfast, she painted the colouring books with water and both brother and sister were laughing away. Sometimes the silliest presents give the greatest joy. It was then off to school for the kids and off to work for us.

Chocolate Mousse Royale Ice Cream Cake for a 14th Birthday





Ahh, how time flies. My little boy is no longer a boy and is now a 14 year old young man! His birthday this year fell on a Sunday and we started the day off by going to church. We were running a little late so we didnt wake him up to open his presents as we usually do. I managed to quickly place his presents under the bed just as he left his room and then we went back in and wished him.

He got a Chelsea t-shirt and a lego mini figure. We were supposed to get him a pair of sneakers that he wanted but there wasnt time to go shopping so hopefully we can go get it soon. After church we went for lunch the grandparents and then headed home to cut the cake.

Giant Choc Chip Cookie Dessert



Mothers day 2015 was celebrated on the 10 May and The Lovely Wife asked if I could make her a trifle. Sure! Why not! While the kids liked the idea of a trifle, they wondered if I could make something else as well. You see, I havent been baking too much new stuff off late and I guess the kids just wanted to try something new. I said I'd make them whatever they wanted but they retorted by asking me for suggestions. The trifle was being made on Saturday for Sunday as it needed time to set. So, since the inlaws were coming over on Saturday night, I decided I'd make something for dessert. I suggested a lemon cake but while my daughter thought that was a good idea, my son didnt seem to keen. I went through a few possibilities while searching the internet but most elicited looks of boredom and disinterest.

I had seen a Giant Chocolate Chip Cookie Sunday offered as dessert at some restaurant, I can't quite remember which one though. So I threw the idea to the kids about a giant choc chip cookie like dessert that you could eat with ice cream. The looks of boredom immediately turned to interest. Deep interest! I surfed the web for a few recipes and settled on this Choc Chip Cookie Cake from Sallys Baking Addiction.

11 year old Princess with a Salted Caramel Chocolate Mousse Cake



So my princess turned 11 today, the 17th of February 2015! As per the practice over the years, we placed her presents under the bed and then woke her up.



It was a school day for her today while her brother Michael started the school break for Chinese New Year. She gets tomorrow until the end of the week and also the next Monday off.

She got a few presents from us starting with an Adidas T-shirt. My princess loves games that you play together and with that in mind we got her a board game called You are Sentenced, a small dice game and finally an Electronics Lab that lets you build 130 different circuits to build timers, make make sounds, flashing lights and other electronic gizmos - supposedly even an AM Radio!

She seemed quite please with the presents and with the presents out of the way, she got ready and went off to school. I had to go to work but after school she was taken for lunch at Chillis with Mummy, Mike and Amma. My wife's brother and family went for lunch too.


Later in the evening, my parents visited and we went out for dinner. Sarah wanted Japanese so we went to Rakuzen at Sri Hartamas. She enjoyed a Sushi and Tempura bento while Michael went for the Unagi Rice Bento. Mummy had a Teriyaki Cod while my parents shared a Beef dish. I had a Beef Teppanyaki and we all shared a Grilled Salmon head. I had told the restaurant manager that we were celebrating Sarahs birthday and they gave us a complimentary dessert - Japanese ice cream wrapped in some kind of waffle covering. Rather tasty!

After dinner we returned home to cut her cake that I had made the night before.

Birthday Dinner at Gastro Dharmus





Yeah I know I'm late and I'm slacking on this blog but it's not easy finding the time. Anyway, August 10th 2013 was The Lovely Wife's birthday. The day coincided with the wedding of one of my cousins so we couldnt celebrate her birthday. Fortunately, the preceding Thursday and Friday were Public Holidays due to Hari Raya so we decided we would celebrate TLW's birthday on Friday night instead.

Initially I had planned on taking TLW and the kids out for a fancy dinner. Then I thought why not make her a fancy dinner at home instead. After all, unless I took her out to a really swanky restaurant, I would only end up humming and hawing about the food and especially the dessert. By cooking at home, I would save everyone from listening to my hums and haws...

The plan was to make TLW a seafood dish. TLW likes cod and I had grandiose plans of Grilled Cod with Prawns. I would serve it with a side of Pumpkin mash and a citrus honey salad. That was the plans but sometimes the best laid plans go awry.

On Friday morning, the kids and I went shopping for groceries. TLW had some errands she needed to run so that fit us just perfectly. When we reached the market in Bangsar, we ran into the first problem. Being the second day of Hari Raya, the usually active morning market wasnt at its full service. The fishmonger was sorely missing so that meant no Cod. Aaargh! There was no Cod in TMC (the nearby Supermarket) and Village Grocer (another Super) was closed as well. Things were not looking too good. Fortunately the flower lady was around and we bought a whole bunch of flowers for The Lovely Wife. We bumped into my father while buying the flowers and he insisted on paying for them.

11 Years old today with a Chocolate Awesomeness Cake





I know its been a while since I updated this blog with any recipes so I suppose it's kind of fitting that this latest update is about my son's 11th Birthday! It was kinda fortunate that his birthday fell on a Public Holiday today so we were able to stay at home with him and also invited the family over for a Birthday Lunch. My parents were away in Melbourne while my brother and his daughters were in Gold Coast so that meant slightly fewer people. Still, there were about 15 odd people invited!

As per the tradition in this household, we woke my son up after hiding his presents under the bed. My little princess had 'camped' on the floor in his room the previous night too!



For his birthday this year, he got a replica Chelsea jersey and also a table football game - Subbuteo - something that Dads had always wanted when he was young as well! It didnt take long for both the kids to test out the game.


The Lovely Wife, together with help from her Mom, did their magic and whipped up the lunch spread. For lunch there was Stewed Pork (Tau Yew Bak) with Man Tau buns;



Fried Prawns, Chicken Curry,




Yoghurt Curry (Mohr Curry) Mixed Vegetables,




Vegetable Accar (Pickles) and Onion Rice.



Quite a fancy little spread if you ask me! My contribution as usual was dessert and the Birthday Cake.

My son had asked for a different cake, something that would be really nice but also chocolatey. He especially liked the Chocolate Truffle Torte that I had made for Christmas last year so I decided to adapt that recipe and make something completely new.

Actually, for this cake, I adapted various different recipes and components that I had made before to assemble this cake. I used the tried and tested Cake Boss Sponge recipe that I have grown to love as the base. I modified my Tiramisu soaking syrup to make it less coffee flavoured. I used the Praline Feulletine component of the Le Kit Kat cake inspired by Michel Richard and adapted the Truffle from the Chocolate Truffle Torte to assemble this cake.

Brownie Throwdown - Gary Mehigan


All of us are big fans of Junior MasterChef Australia so it was no surprise that on a recent quick trip to Sydney on work, The Lovely Wife bought me a copy of Gary Mehigan's cookbook. Over the weekend, I was in the mood to bake something and was rifling through Gary's book. I came across his Brownies and although I have my own tried and tested recipe, I thought why not try his out and see how it compares?
The kids also love watching Bobby Flay's 'throwdown' and so when I suggested that I make the Mehigan Brownie, the kids were game and likened it to a 'throwdown'! Okay, not quite the same as a real throwdown but it would be a fun thing to do. In any case, I really wanted to see how Gary's brownies would turn out.

Truffle Torte - Christmas 2011



This post finishes off the Christmas 2011 Meal...

Choosing the dessert for Christmas took quite some time and was a choice between going down the route of a tried and tested or doing something new. As I usually do when deciding on a dessert, I leafed through my numerous cookbooks. My son sat with me as I was rifling through pages and pages when his eyes fell on the Truffle Torte from my Le Cordon Bleu cookbook. "Dads, can you make that for dessert?" he asked as he tapped his finger on the page.

I had often wanted to try out this cake but the amount of chocolate it required coupled with the fact that it required a very thin sponge to be made had always deterred me. Not this time however. I scanned the recipe, smiled up at my boy and promptly declared that this would be dessert for Christmas Eve dinner.






This recipe is interesting in that it calls for a little bit of gelatine and liquid glucose to thicken the chocolate. I decided to substitute Honey for liquid glucose. I also decided that since I was using dark chocolate for the filling, I would use some milk chocolate for the chocolate pieces that would go around the cake. The final modification that I did was to top the cake with caramelised almonds for that extra crunch rather than to dust the top with cocoa as the recipe called for.

The sponge was fairly easy to whip up especially since the eggs are beaten over a pot of simmering water. The eggs fluffed up really nicely and didnt deflate too much once the flour was folded in. The cake was nice and soft and in fact bits of the top stuck to the cooling rack as I left it to cool a tad too long. Next time I should place some non-stick paper over the cooling rack.

This is my modified recipe based on the one from Le Cordon Bleu Home Collection - Chocolate.

Ingredients
2 eggs
2 1/2 Tbsp Caster Sugar
4 Tbsp Plain Flour
1 Tbps Cocoa

30ml rum
330g Good Quality Dark Chocolate
200g bar of milk chocolate
1 tsp gelatine powder
1 Tbsp honey
500ml Whipping Cream

Method
To make the sponge: preheat the oven to 170C. Butter and flour a 8 inch springform pan. Half fill a saucepan with water and bring to the boil. Remove from heat. Put the eggs and sugar into a large heatproof bowl and place over the saucepan making sure it is not touching the water. Using electric beaters, whisk for 5-10 minutes until the mixture is thick and light, has doubled in volume and leaves a trail as it falls from the beaters. The temperature of the mixture should never be hot, only warm. Remove the bowl from the pan of water and continue to beat until cold. Sift the flour and cocoa together and carefully fold into the whisked mixture with a large metal spoon or plastic spatula until just combined. Pour the mixture into the tin and gently smooth the top with the back of the spoon. Bake for about 15 minutes or until springy and shrinking from the sides of the tin. Turn out onto a wire rack to cool. Clean the cake tin so it is ready to use later.

Trim the top crust from the sponge using a long serrated knife. Cut the cake into a disc no more that 1.5cm thick and to just fit inside the tin. Place on a 8 inch cake card inside the tin or directly on the base of the tin. (I used a cake ring placed over a square cake board). Brush the sponge with the rum.

Put the chocolate into a bowl. Half fill a saucepan with water and bring the the boil. Remove from the heat and place the bowl of chocolate over the pan making sure the bottom of the bowl is not touching the water. Leave the chocolate to melt slowly, then remove the bowl from the pan. Stir the gelatine powder and 1 Tbsp water over a pan of simmering water until dissolved. Add in the honey and stir well. Pour onto the melted chocolate mixing thoroughly. If mixture turns lumpy, heat very gently over a pan of simmering water until smooth. Let cool.

Whip the cream till soft peaks form and then fold into the cooled chocolate mixture. Do not overmix. Fill the tin to the top with the truffle mixture and level with a pallete knife. Refrigerate for a few hours, preferable overnight.

For the sides, melt the bar of milk chocolate and spread onto a sheet of non-stick paper and spread to a thickness of 2mm. Refrigerate until set then break off large pieces and stick on the side of the torte. Dust the torte with cocoa powder (I used caramelised almonds instead)






So yes, a rather long and tedious recipe but when you actually make it, it really doesn't seem that long nor tedious.

After brushing the cake with rum I used my dessert ring to surround the cake rather than a springform as I wanted the cake to sit on a cake board instead of the springform base. Making the truffle filling was very easy too. As I mentioned, I substituted the Liquid glucose for honey and I'm still wondering why there was a need for gelatine as I am sure the truffle filling would have held up on its own. I think I scrimped a bit on the chocolate for the pieces surrounding the cake as I didnt get a large enough bar! So when I tried sticking the pieces on, they were rather thin and the heat of the kitchen and my hands started to melt the pieces rather quickly.

I think the addition of the caramelised almonds really made a difference as the crunchy, nutty, sweetness complemented the taste of the dark chocolate really well. The truffle filling actually resembled a really thick mousse and it was very chocolatey and flavourful. The thin layer of cake offset the creaminess of the truffle filling and provided a nice change in texture. The cake practcally melts in your mouth and my son came running up to me for seconds even before I had finished serving the rest of the guests! I told him to wait his turn while everone else had a slice first then proceeded to give him a larger piece that he devoured just as quickly!



I was actually a little surprised at how easy this cake is to make especially since it produces such sensational results. My darling boy certainly loved this cake and my little Princess quickly agreed. I would have to agree with them that the cake was really pretty amazing. Definitely something I want to make again and I'm so glad my son spotted this and asked me to make it as I would probably have just left it as one of my 'want to makes' instead of actually making it!

Back to Childhood Cupcakes



A couple of Saturdays ago, The Lovely Wife and I were supposed to catch up with two friends - Lynn and Ms Kong Piang - over drinks. My son however had developed a fever so the two ladies asked if it was okay if they popped round instead. When I know that friends are popping over, I always feel that I have to serve something.

A good friend, Naomi, had given us some lovely Cheddar cheese when she had come back to Malaysia recently for a holiday. The cheese was tangy and had a lot of bite that made it really delicious with crackers. That would go down well for the after dinner drinks.

I also decided that I would make some muffins. I know Ms Kong Piang likes my cakes and Lynn is also one of my favourite 'consumers'! I was tempted to just redo what I did on my last post - Walnut Choc Chip Muffins - but decided that I would try something new. I browsed through my cupcake/muffin book and found a recipe for Cookies and Cream cupcakes. This was basically throwing in some crushed Oreos into the batter. Another variation called for substituting the Oreos for Nougat bars. A lamp bulb started to flash in my head and the gear wheels in my brain started to churn as well. What if I used Oreos and Snickers? That would have to taste delicious! Woulnd't it??




So thats what I did. Bought a pack of Oreos and two Snickers bars. Crushed and chopped them up respectively and then threw them into the cake batter. I knew that the cupcakes would be a tad sweet due to the Oreos and Snickers so I put in a disc of dark chocolate in the middle of each cupcake. This would give it a slightly bitterish tinge when bitten into.



Ingredients
250g butter
225g Caster Sugar
225g Self Raising Flour
1 tsp baking powder
4 eggs
1 tsp vanilla essence
1 Tbsp Milk
1 packet Oreo Cookies - crushed
2 snickers bars - shopped
Method
Melt the butter until very soft but not completely liquid. Add in the sugar and beat till light. Add beaten eggs a little at a time and continue beating
Fold in Sifted flour and baking powder.
Add in Milk and Vanilla. Mix Well. Fold in Oreos and Snickers.
Fill muffin cups ¾ full and top with a Dark Chocolate disk. bake for about 30 minutes or till done in 180°C oven






I made two sizes of cupcakes. Twelve medium sized cupcakes and twelve large ones. I went a bit overboard with the large ones and overfilled them. They rose beautifully but then started to spill out over the sides of the muffin cases. If they had held, or if I had placed the muffin cases into a muffin pan, I would have gotten lovely muffin caps but alas, the cases were too big to fit into the muffin pans and the batter just spilled over...

No use crying over spilled batter.

Nonetheless, the larger cupcakes turned out really nice and cakey with a light, soft crumb. The taste of the Oreos combined nicely with the taste of the Snickers although neither taste was overpowering. The cupcakes were a tad sweet - sweeter than what we are normally used to and this was due to the Oreos and Snickers. The cupcakes were still very delicious nonetheless.

Since the cupcakes seemed to fit into the mould of a dessert, I served up a batch with Ice Cream and Chocolate Sauce. Yummy! Very, very delicious and my kids absolutely loved it.



Later that night, I served Lynn and Ms Kong Piang the dessert version and they both agreed that although a tad sweet, it was very nice. Both of them took some home too while the rest was eaten throughout the weekend - either on its own or covered with Ice Cream and doused in Chocolate Sauce!




I call these cupcakes, Back to Childhood cupcakes because with Oreos and Snickers in them each bite kind of transports you back to your favourite indulgences when you were a kid. Every kid will definitely like these cupcakes and every adult that still has some kid left in him will love it too!

Le Snick Snack - A Homemade Snickers Dessert





Every meal has to end with a dessert and to finish off my dinner for eight series of posts is this dessert.

When deciding what to make for dessert, The Lovely Wife suggested I go down the route of a tried and tested. After all, she advised that I wouldn't want to make something that might not turnout well. In her infinite wisdom (and good looks too!) The Lovely Wife suggested that I should make my version of Le Kit Cat that I had made some time ago for her friends. That is one seriously lovely dessert.

The Lovely Wife made a lot of sense. However, I realised that there is a serious problem with having a food blog. It's really difficult keeping it 'alive' as that means knew recipes and posts have to be added in all the time! The upside to having a food blog though is that I keep challenging myself to come up with new recipes and this means that not only do I keep broadening my horizons, it also means that the kids and The Lovely Wife get to keep trying out new foods.

So with that in mind, I decided that I would HAVE to make something new. Sometimes the best new thing to do is to combine a few elements made from other recipes and come up with a completely knew when. That's what I did and I came up with Le Snick Snack - my own take on a Snickers Bar but made as a dessert!







Snickers is probably one of our favourite chocolate bars. Whenever we are feeling like a chocolate fix and pop in to the nearby petrol station or supermarket, we always end up getting either a Snickers Bar or a Kit Kat. So, since I already know how to make a Kit Kat dessert, it was time to make a Snickers Dessert.




Base:

3 Eggs whites
150 g castor sugar
150 g ground almonds
Make the base. Line a 9" Springform pan with baking paper. Whisk eggs whites till foamy and then add in sugar and whisk till stiff. Fold in ground almonds. Spread meringue mixture into springform and bake in preheated 170C oven for about 40 minutes or till meringue is cooked. Remove from oven and cool slightly. Remove springform and greaseproof paper from meringue. Allow to fully cool then replace into springform.

Caramel Layer
1 cup granulated sugar
1 cup (250 g) whipping cream
¼ cup (50 g) butter
2 whole eggs
1 egg yolk
2 ½ tablespoons (15 g) flour

In a saucepan, caramelize 1 cup (200 g) granulated sugar using the dry method until it turns a golden caramel color. Incorporate the whipping cream and then add butter. Mix thoroughly. Set aside to cool.
4. In a mixing bowl, beat the whole eggs with the extra egg yolk, then incorporate the flour.
5. Pour this into the cream-caramel mixture and mix thoroughly.
6. Spread it out in the tart shell and bake at 160C for 25 minutes. Remove from oven and allow to cool.

Top Layer:
400 ml whipping cream
200g good quality dark chocolate
3 egg yolks
2 tbsp Sugar
1 Tbsp Crème de Cacao
100g Peanuts

For the top layer, melt the chocolate over a double boiler on low heat. While chocolate is melting, whisk the egg yolks with the sugar and quickly add into the melted chocolate. Remove from heat and continue whisking till smooth. If chocolate becomes clumpy, add in a little warm cream. Add in the Creme de Cacao. Whisk the cream until soft peaks form. Fold a little of the whipped cream into the chocolate, then fold in the remaining cream.

Sprinkle the peanuts over the caramel layer then spoon over the Chocolate mousse and smoothen the top. Chill for at least 4 hours or preferably overnight.


It all sounds rather cumbersome and complicated but if you break it down into it's individual elements it really isn't all that bad. There were a few lessons that were learnt along the way that I will attempt to improve when I make this again.



Firstly, the caramel layer leaked a little down the sides of the meringue so the caramel layer wasn't quite thick enough or well defined. I suppose maybe I should keep the pan lined until after the caramel has been baked. Or maybe make a casing of meringue so the caramel cant leak down the sides. Another thing I would do differently is to add the peanuts into the caramel mixture rather than sprinkling it on top. You can see all the layers above. The almond meringue base, the caramel centre with peanuts and the choc mousse on top. Kind of looks like a Snickers Bar doesn't it!!


Having said all that however, the dessert was absolutely delicious and tasted quite like a snickers bar - only more luxurious and fancy schmancy like a great dessert should! All our guests had two servings each and my son was delighted that he got home in time for dessert!

I'll probably make this again some time and when I do, I"ll incorporate the changes and see how that works out.

So...with Kit Kat and now a Snickers Bar converted into desserts, I wonder what other Chocolate Bars I can convert to desserts. Any ideas or suggestions??

Fudge gone awry transforms to Truffles!



For the longest time, I've wanted to make fudge. Chocolate Fudge that is. My Aunt Julie makes a great toffee fudge and she tells me that the secret is in the quality of Condensed Milk. In looking for a recipe for Chocolate Fudge, most of them either required a sugar syrup boiled to soft ball stage or the use of Condensed Milk.

What I dont like about condensed milk is that in Malaysia, is is now almost impossible to find Condensed Milk. Real Condensed milk that is. What is sold here is sold as Sweetened Thickened Creamer. The Reason? Whereas Condensed Milk is sweetened milk where the water has been removed, the Sweetened Thickend Creamer is actually mixed with Palm Oil and other additives so it's not really 100% milk anymore.

So when I found a recipe that used Evaporated Milk instead of Condensed Milk, I was rather pleased. I modified the recipe a little and started to make the Fudge. First mistake though was that I cut down on the sugar. Not a very bright thing to do in retrospect as the sugar would be what thickens the milk. Next, I didn't watch the boiling mass and it overboiled and spilled all over my stove top. To cut a long story short, the mixture didn't set. It just refused to harden up sufficiently to fudge consistency even after I placed it in the freezer.

It tasted bloody good though! So, in order to salvage the 'disaster', I decided I'd roll up the mixture in cocoa and produce truffles. And what truffles they were! I still had to keep them in the freezer as they melted really quickly but that was part of the magic. The chocolate truffles were really rich and chocolatey and were what you would expect from an expensive store or hotel. Simply delicious.



This is the recipe for really simple but stunning Chocolate Truffles.


Ingredients
2 cups sugar
400g tin evaporated milk
4oz butter
300g good quality chocolate
2Tbsp Cocoa
100g roasted almonds
1 Tbsp vanilla
Method
Combine sugar and milk in a saucepan. Bring mixture to a boil and then cook for 12 minutes, stirring to make sure mixture doesn't boil over. Allow to cool slightly and then add in butter, chocolate and vanilla. Mix well till nicely combined then beat until mixture starts to lose its gloss. Add in nuts and chill for a while. Roll into balls with cocoa dusted hands.





I doubt I would make these again as I'm sure there are easier ways to make truffles which would probably taste just as good if not better. I really have to try and make a fudge again some day but what I am most happy about this attempt is that nothing went to waste and quick thinking saved the day for all that chocolate that went into this. Most importantly, the kids really enjoyed this although they both looked at me and asked:

"But Dads, I thought you were making Fudge?"

Pear and Chocolate Mousse Cake



Not too long ago, actually it could be sometime in May, so that makes it quite some time ago, I made this dessert for a couple of friends that came over for tea and good conversation. Lynn brought along a lovely salad while the delectable Ms Kong Piang brought along a team smoked trout that was rather delicious. She also mentioned that she hadn't had a nice dessert in a while and that all the stuff she had been 'forced' to eat was really not worth her time. Ms Kong Piang often repeats that same story to me just to get me to make her desserts. *Yawn*

So anyway, not wanting to disappoint neither Ms Kong Piang nor Lynn, I decided I was going to make something different. Something chocolatey yet fruity. The Lovely Wife kept bugging me as to what I was going to make but I hushed her up. Very politely too!

In my mind, I wanted a chocolate cake with a pear mousse on top. I surfed the web for a Pear Mousse recipe and found this recipe from cdkitchen.com reproduced below.

For the cake, I decided on using my Baked Chocolate Mousse as I wanted a nicer soft texture.

While I was baking the mousse, I decided to make a cinnamon sauce to complement the pear mousse.


Ingredients
PEAR MOUSSE
3 large pears
1/2 cup butter, melted
1 cup sugar
2 tablespoons fresh lemon juice
1/4 cup brandy
1 cup Whipping cream


Method
Peel and core pears and chop coarsely. Place pears in pot with sugar and butter and lemon juice and cook and stir over low heat 15 to 20 minutes.

Let cool slightly and place in blender and puree smooth. Add the brandy and mix well. Cool completely.

Whip heavy cream and blend into cooled pear mixture. Chill well for several hours.


BAKED CHOC MOUSSE CAKE
200g Good Quality Dark Chocolate
4 eggs
200g Caster Sugar
300 ml Thickenend Cream
3 Tbsps Corn Flour

Method
Melt the chocolate over a double boiler and let cool. Meanwhile, beat eggs with sugar till nice and foamy. Add in the melted chocolate and continue beating till nicely incorporated. In a separate bowl, whip cream to soft peaks. Fold into the chocolate mixture and then add in sifted corn flour. Mix well to incorporate. Pour into a 9" round pan and place in a water bath. Bake in 180C oven for about 30 minutes.

Caramel Cinnamon Sauce
5 Tbsp Sugar
2 Tbs Water
1 Tbsp Butter
about 1/2 cup cream or milk
2 - 3 tsps Cinnamon powder (to your taste)

Method
Melting the sugar and water and allow to cook without stirring till the sugar turns amber. Turn add in the butter and stir quickly. Mixture may sputter. Reduce heat and allow to cool slightly before adding in the milk/cream. Return to heat and whisk until everything combines and mixture is nice and thick. Add in the cinnamon powder to taste.



Before serving, I dusted the top of the pear mousse with some cinnamon powder for those that didnt want to eat it with the caramel cinnamon sauce. The cinnamon really did make a difference and seemed to bring out the flavour of the pears.




The pear mousse turned out really nicely although if I make this again, I would let the pears mixture thicken some more as the mousse took a long, long time to set. In fact, even after being in the freezer overnight, the mousse melted very quickly. However the next day, the mousse had set up very, very nicely as you can see above.



The mousse was great as a dessert on its own too - especially with the caramel cinnamon sauce! Ms Kong Piang remarked that it would make a very good ice cream.




The combination of the pear mousse and the baked choc mousse was rather sublime and very interesting. The fruitiness of the pears combined really well with the chocolate and one slice was definitely not enough. This is the kind of dessert that you can just eat and eat... and that's exactly what we did!

Mocha Pudding




A few weeks ago, I had promised the kids that I would make them a nice dessert, something chocolatey and pudding-like. They were rather excited and they asked if I could make them something Mocha instead. Mocha has become the flavour of the month with the kids and truth be told, they like little sips of coffee as well!
I had planned to make it one weekend but then the 'lazy monster' took over and I apologised to the kids and said that I would make it another day.

A few days later, I took the kids out for dessert as The Lovely Wife had a dinner date with some friends. We ended up going to TGIF and wanted their Mocha Mud Pie but as luck would have it, they were out. They had something called Mini Delights which were actually a variety of small puddings served in shot glasses. I told my kids not to bother with them as firstly, the servings were too small and secondly, I could probably make something better. They both agreed and we ended up just having the Sundae which I have to say was pretty darned disappointing. As we left the restaurant, they both asked me if I would make them the puddings that I had promised soon and I promised I would.



I was actually going to modify the tried and tested Chocolate Pastry Cream Recipe from a previous Daring Bakers challenge. Or maybe even the Chocolate Custard recipe from my Chocolate Trifle.

The issue that I had with both those recipes was that they both needed egg yolks and I didn't want to waste the whites. So I surfed the web and found this recipe that used Whole eggs for the custard! I've never used whole eggs for custards or custard like puddings and I was a little worried how it would turn out.



I modified the recipe slightly and this is what I came up with:



Ingredients
• 1-1/2 cups milk
• 2Tbsp coffee powder
• 1/2 cup whipping cream
• 3Tbsp cornstarch
• 1/2 cup sugar
• 4 Tbsp. cocoa powder
• 3 large eggs
• 100g. bittersweet chocolate, coarsely chopped

Method

Combine milk, coffee and heavy cream in a heavy, medium saucepan and heat up to just under a boil. Meanwhile in mixing bowl combine cornstarch and sugar and sift in cocoa powder. Whisk until blended. In another mixing bowl, whisk egg until blended, then add to sugar mixture and whisk until well combined.

Slowly add half the hot milk mixture to egg mixture to temper it while whisking continuously. Pour egg mixture back into pan with rest of the milk mixture and cook over medium heat, whisking constantly, until mixture has become very thick . This should take about 7 minutes, depending on how cold your eggs are.

Remove from the heat and add in the chocolate and let heat of the custard mixture melt it. When the chocolate has melted, whisk together until smooth. Spoon the custard into cups right away and then chill for several hours.



I took a leaf out of the TGIF Menu and chopped some Snickers Bars and added them to the top of the pudding as a garnish. This gave the dessert and extra bite, a bit of crunch and more of a yummy factor.



The top of the custard formed a little bit of a skin the longer it stayed in the fridge but the Snickers on top more than disguised that. It was kind of nice to have a bit of a thicker top as well.


The verdict? The kids loved it! They liked the fact that the coffee wasn't overpowering and that the coffee flavour was more of an undertone and more noticeable as an aftertaste.



Both the kids had two servings at one go and then looked forward to having the dessert at every meal till there was no more. After the last one was finished, both of them looked at me and asked if there was any more. When the reply came that everything had been polished off, they immediately asked when I was going to make this again!

Hedgehogs and Spiders for Easter...




This post is rather late as Easter was last weekend, however, better late than never as they always say. This Easter, the kids really got involved in the cooking - or at least the selection of what to cook!!

After going vegetarian for Lent, somthing that I was very impressed with the kids for doing as I didn't really observe the Vegetarian bit, they were really keen on a Meat Fest! They 'dictated' to their maternal grandmother what they wanted as well as to The Lovely Wife. Amma - what the kids call maternal Grandma although by right Amma means mother and the correct word should be Ammama (Mothers mother) - made some Mutton Chops for them while The Lovely Wife did her famous BBQ Chicken Wings.

My two children have also been avidly following MasterChef and Junior Master Chef (Aust) and have suddenly started looking at some kids cookbooks that we've bought them. In one particular book, two recipes caught there fancy. One was for a Hedgehog cake while the other was for Spider Meatballs.

"Can we make this for Easter?" They both piped up.
"Sure" Mommy and Daddy replied, "As long as you HELP and not make us do all the work."



And help they did!

Rather than follow the recipe in the book, I made my usual meatballs. I made them a bit larger and flatter though to shape them like the body of a spider. For the legs, we sliced capsicums thinly and stuck them into the meatballs. The eyes were capers stuck on to dollops of mayonnaise.



For the hedgehog cake, I used my usual chocolate cake recipe as well and just shaped it into an ovalish kind of shape. For the 'prickles' I used a fork to shape the icing and then used Chocolate "Rocky Brand" sticks for the spikes. For the eyes and nose, I made a quick fondant with a dash of water mixed into icing sugar and then popped an M&M on to it. The mouth was made with nibbed almonds. There was a little cake batter left over and we made a 'baby' hedgehog using my rabbit pans.





The kids had a blast making the cake and the meatballs and they did more than help. They actively participated in the making of the cake where both sifted the flour, held the mixer to beat the sugar and butter and of course in decorating the cake. Same with the spiders where they helped to shape the meatballs and of course had a lot of fun sticking the 'legs' into the spiders!


I have to admit, I'm still a little afraid of the kids using the kitchen appliances but I'm glad that they have taken a real interest in cooking. They loved the fact that they had bragging rights over the cake and spiders and they enjoyed eating their own creations too!
